Seed bread toasts with roasted pumpkin, goat cheese and honey-thyme dressing

Crispy toast with roasted pumpkin, soft goat cheese, and aromatic honey-thyme dressing. A great fall snack or light dinner.
You will need

4 slices – Five-grain bread KAIMIŠKA, sliced, 400 gBuy
- 150 g pumpkin (e.g. butternut), thinly sliced
- 80 g goat cheese (soft type)
- 1 tablespoon of honey
- 1 teaspoon of fresh or dried thyme
- 1 tablespoon of olive oil
- A pinch of salt and pepper
- For decoration: walnuts, arugula or microgreens
Baking
- Drizzle the pumpkin with olive oil, sprinkle with salt, pepper and thyme. Bake in the oven at 200 °C for about 15 minutes, until soft and lightly browned.
- Lightly toast the bread slices to crisp the edges.
- Place slices of roasted pumpkin on each slice and sprinkle with crumbled goat cheese.
- Drizzle with honey, sprinkle with additional thyme and, if desired, walnuts.
- Garnish with arugula or microgreens.
